Pancetta, also known as Italian bacon, is pork belly dry-cured in a herbal cure rather than a sugar cure like American bacon. The herbal aroma & flavors make pancetta especially valuable for cooking.
Tails & Trotters pancetta is dry cured without any sugar, and is aged 3-4 months to concentrate the herbal flavors while keeping the natural sweetness of our hazelnut-finished pork at the forefront. It is offered in "Tessa" style, as a small chunk or slab.
