The "pluma" is a 1/2lb flap of boneless rib meat from the front of the shoulder, between the brisket & shoulder spare ribs. The muscle doesn't develop until the pigs are much larger than standard commodity size, and is one of those secret "butcher's cuts" that rarely makes it into the meat case.

Luscious & flavorful without any intervention, yet takes on a marinade or spice rub equally well.

Best grilled over medium-high heat, the delicate fat throughout this cut will prevent it from turning into cardboard if overcooked. A shop favorite, used for both "ribwich" and Basque-style sandwich specials.
